TASTING NOTES
A pretty pale pink champagne of exhilarating freshness, elegance and red subtlety, made from principally Pinot Noir and one fifth Chardonnay grapes. Matured in bottle on its lees for 48 months, it captures clean fresh red fruit on the nose, followed by lively fresh fruit flavours of wild strawberry and raspberry on the palate with an appealing softness. Elegant and vey sippable - the perfect Champagne combination.

PRODUCER DETAILS
Champagne Lallier are a small family concern crafting Pinot Noir blends from their own (and some specially selected other) 'Grand Cru' vineyards in Ay - also home to Bollinger but Lallier's cellars are older.

IN THE VINEYARD
The house of Lallier specialises in producing champagnes by sourcing exclusively from vineyards officially classified Grand Cru and Premier Cru. This wine is made from grapes Grown in exclusively Grand Cru vineyards in Aÿ, Bouzy and Avize.

IN THE WINERY
A blend of 85% year’s wine and 15% reserve wine from exclusively Grand Cru vineyards, the provenance of the grapes enables a low dosage to express the purity and the richness of these terroirs. With a dosage of 10g/L, the wine is matured in bottle on its lees for 24-36 months in Lallier's underground cellars. 70% of the wine results from a saignée - this distinctive vinification method brings a very unusual freshness and minerality.

FOOD RECOMMENDATIONS
Amazingly versatile this can be served as an aperitif, with rare beef or carpaccio, veal, roast chicken, pheasant or partridge. It matches well to light fruit desserts also.
